Its bottle fermented in the ancestral way, so you get small, lively bubbles and a very easy going style, more about refreshment than structure. Made with organic, low intervention methods, its fermented with native yeasts, bottled unfined and unfiltered and may show a light natural sediment. No additives or heavy manipulation
