It is made from Pedro Ximnez, a grape often linked with sweet wines, but here shown in a dry and textured style. The grapes come from 20 year old vines planted on clay, iron rich and limestone soils at 438 metres above sea level. After harvest, the fruit is destemmed and the free run juice is fermented in stainless steel. The wine then spends 10 months on its lees,
