Bourgogne Aligoté Year:2023 followed by native yeast fermentationThis Bourgogne Aligot is a strong example of how characterful Aligot can be. It comes from Aligot Dor vines planted on very rocky clay limestone soils, on the site of an old Gallo Roman villa below Comblanchien. That combination of place and grape gives the wine a clear mineral feel and a gentle salty edge. In the cellar, the approach is simple and careful: direct pressing, spontaneous fermentation, and 12 months of ageing in neutral French oak
